Watermelon Pecan Salad

Ingredients

  • 5 cups seeded and cubed watermelon
  • 6 oz mixed greens
  • ¾ cup chopped toasted Newberry Pecans
  • 1 cup crumbled Bleu cheese
  • Balsamic vinaigrette

Directions

  1. Combine watermelon and greens in a large bowl. 
  2. Toss gently with Balsamic vinaigrette.  
  3. Transfer watermelon mixture to a serving platter and sprinkle evenly with pecans and Bleu cheese. 
  4. Season to taste with additional salt, if desired.
  5. Pass additional dressing on the side.
  6. Chicken or shrimp may be added.
