Pecan Cranberry Brie

Ingredients

Cranberry Orange Sauce Ingredients

  • 1 (12 oz.) pkg. cranberries
  • 1 1/3 cup sugar
  • 1 tbsp. finely shredded orange peel
  • ¼ cup water
  • 2 tbsp. lemon juice
  •  ¼ cup orange juice (Cointreau may be substituted)

Pecan Brie Ingredients

  • One 15 oz. round brie 
  • 3/4 cup Newberry Pecans, chopped 
  • ½ cup cooled Cranberry Orange Sauce (see recipe below)
  • unsalted crackers 

Directions

Cranberry Orange Sauce Directions

  1. In large saucepan, combine cranberries, sugar, orange peel, water, and lemon juice; mix well. 
  2. Cook over medium-low heat until juices start to flow and sugar is dissolved.  
  3. Stir frequently.
  4. Increase heat to medium; simmer an additional 6 to 8 minutes or until cranberries pop, stirring occasionally.  
  5. Stir in orange juice (or Cointreau!).  
  6. Refrigerate one hour or until completely cooled.

Pecan Brie Directions

  1. Spread pecans in a 9-inch pie platter.  
  2. Microwave on HIGH, 4 to 6 minutes.  
  3. Stir every 2 minutes. 
  4. Remove rind from top of Brie, if desired.  
  5. Pour Cranberry Orange Sauce over Brie; microwave on HIGH for 2 minutes.  
  6. Turn dish after 1 minute.
  7. Top with chopped Newberry Pecans
  8. Serve warm with crackers.
  9. Makes 10 to 12 servings.
