PRINT THIS RECIPE
Pear, Blue Cheese, and Pecan Bites
3 tbsp. white balsamic vinegar
1 tsp. dijon mustard
1 tsp. freshly squeezed lemon juice
1 tsp. maple syrup
¼ cup extra virgin olive oil
salt and pepper, to taste
1 package phyllo cups
1 medium pear, peeled and chopped
3 tbsp. crumbled blue cheese (goat cheese works well also)
1/3 cup dried cranberries, chopped
1 tbsp. Italian flat leaf parsley, chopped
¼ cup pecans, toasted* and chopped
Place all ingredients in a small mixing bowl and whisk until well incorporated.
Bake phyllo cups per package directions.
Place all ingredients except pecans in large mixing bowl.
Add half the dressing or more to taste. Mix well.
Divide between the phyllo cups.
Sprinkle with chopped pecans.
*To toast pecans, place on a rimmed cookie sheet in a 350° oven for 8-10 minutes.
