Festive Pecan Goat Cheese Log
½ cup dried cranberries, chopped
½ cup finely chopped Newberry Pecans
2 tablespoons finely chopped fresh parsley
8 ounce log of goat cheese, softened
eggs, for wash
Preheat oven to 375°.
Thaw puff pastry.
Mix cranberries, Newberry Pecans, and parsley.
Pour mixture on flat surface.
Carefully roll goat cheese log in the cranberry, pecans, and parsley mixture until goat cheese log is covered completely.
Unwrap puff pastry sheet on work surface.
Place coated goat cheese log in center of puff pastry.
Brush egg wash onto uncovered sides of pastry and roll puff pastry around goat cheese log.
Press at the overlap to seal well. Pinch ends of pastry firmly around the cheese and trim excess pastry.
Bake 10-15 minutes until golden brown.
Garnish with chopped cranberries, chopped pecans, and chopped parsley,
Drizzle with honey, if desired.
