Cranberry Pecan Goat Cheese Bites w/ Cranberry Orange Sauce
Pecan Goat Cheese Bites Ingredients
1 box Athena phyllo cups (15 per box), cut in small pieces
⅛ oz. of goat cheese, softened
Cranberry Orange Sauce – see recipe below
Newberry Pecans, coarsely chopped
Cranberry Orange Sauce Ingredients
1 (12 oz.) pkg. cranberries
1 ⅓ cup sugar
1 tbsp. finely shredded orange peel
¼ cup water
2 tbsp. lemon juice
¼ cup orange juice (Cointreau may be substituted)
Cranberry Orange Sauce Directions
In large saucepan, combine cranberries, sugar, orange peel, water, and lemon juice
Cook over medium-low heat until juices start to flow and sugar is dissolved.
Increase heat to medium; simmer for an additional 6-8 minutes or until cranberries pop, stirring occasionally.
Stir in orange juice (or Cointreau!).
Refrigerate one hour or until completely cooled.
Pecan Cranberry Goat Cheese Bites Directions
Preheat oven to 325°.
Unwrap one puff pastry sheet and cut it into 18 squares.
Lightly grease mini muffin tins.
Place one square of dough into each mini muffin tin space and gently press them in.
Add goat cheese piece to each cup and top with Cranberry Orange Sauce.
Sprinkle with pecans.
Bake for 10 minutes or until puff pastry edges begin to brown.
